Stockholm's restaurant scene is constantly changing, but some things are still missing. At CHAO NA, Anis Siracha wanted to fill a gap – to serve authentic Thai food without compromise. Passionate kitchen warrior, early morning baker, glass-swirling sommelier or charismatic service star - our industry thrives thanks to the individuals who day in and day out create both experiences and the community we love and want to celebrate in “People of Gastronomy”.
What do you miss about the food and drink scene in Stockholm?
I miss more family-style restaurants with large dishes to share. It's not the same as appetizers – and appetizers are everywhere. I don't really mind it, but I've gotten a little tired of the concept.
What do you like about Stockholm's restaurant scene?
I appreciate that there are many talented chefs and a wide variety of restaurants. Above all, I like that there is often a good and relaxed atmosphere. It doesn't have to be dressed up and stiff, but feels casual but still professional.

Why did you open CHAO NA?
There aren't many authentic Thai restaurants in Stockholm or Sweden. "Chao Na" means farmer, which says a lot about our philosophy. I wanted to show the Swedish audience what Thailand actually has to offer on a more everyday level.
It's interesting that the Thai government once gave grants to spread Thai food globally - but with recipes adapted for the Western world. This has meant that authentic Thai food has almost been forgotten, and we want to change that.

Are there other places that do what you do?
Yes, but many have mixed up their menu with classic dishes like red curry and other "swedish Thai". I think people have been afraid to try "real Thai" for a long time, and therefore the menus are being gentrified.

What do you order when you're in Thailand?
Always our chicken rice – it's the first thing I order there too. My siblings and I grew up with it, and it's truly a classic!
Where do you like to eat in Stockholm?
I like heavy and hearty food, so it's often Bambi. Also Soldier Svejk!
